DAILY RESPONSIBILITIES

Service deli/Rotisserie - Skewers chickens and prepares them to be placed into rotisserie. Loads skews of chickens into rotisserie rotator slots and loads oven. Tests cooking chicken for temperature. Packages in domed trays and moves to heated display case.

Opens packages of meat, poultry or seafood. Adds sauce or other ingredients per formula, places in roasting basket in commercial rotisserie oven, packages for sale, and places in warming display case.

Follows Sanitation Standard Operating Procedures (SSOP) guidelines as it refers to proper cleaning and sanitation of all equipment required by this position.

Completes and complies with 11 Commandments of Quality Assurance, Food Safety Certification, and all safety training required by warehouse and Service Deli.

 

Meat -

Cleans and sanitises the meat room, meat cooler and supply area. Washes, applies cleaning agents, wipes, and mops all surfaces. Pressure washes the entire room. Empties drain screen.

Dismantles equipment. Washes, rinses, and sanitises removable parts. Wipes down stationary parts with cleaning agent and sprays with pressure washer.

Washes small containers and utensils. Re-stocks meat room supplies and boxes of meat.

Collects cardboard and trash; operates trash compactor and cardboard baler. Takes laundry to laundry service pick-up area.

Logs sanitation procedures performed on daily report. Complies with health code. Follows safety and security procedures and reads labels for proper use and precautions of cleaning products.

Assists with stocking cases and follows department production procedures and standards for quality and consistency of finished product.

Bakery -

Maintains current product knowledge of Bakery items.

Moves product filled oven racks. Removes product from baking pans and into packaging. Garnishes baked goods according to item requirements. Stacks used baking pans on pan dollies.

Scales finished product and records on weight verification sheet.

Packages and wraps baked goods by hand or with wrapping machine and label.

Moves wrapped products onto tables and/or stocks them on pallets. Maintains pull dates. Rotates and merchandises product throughout the day.

Completes and complies with 11 Commandments of Quality Assurance, Food Safety certification and all safety training required by warehouse and Bakery Department.

Food Court -

Prepares hot food. Proofs, rolls, shapes, adds toppings or filling, and bakes items such as pizza and chicken bakes. Slices pizza and steams hot dogs and buns.

Places whole pizza orders. Assembles and presents orders to customers. Follows department production and cash handling procedures and standards.

Dispenses dessert and drink items such as frozen yogurt, lattes, and smoothies. Cleans and sanitises service and refills dispensing machines.

Maintains self-serve soda machine, condiment table, and eating area. Cleans, and sanitises tables. Sweeps and mops floors, and empties trash.

Cleans and sanitises the machines, work surfaces, floors, pans, utensils, and counters. Takes garbage to trash compactor and operates compactor. Follows safety and security procedures. Complies with health codes and food safety requirements such as sanitation, temperature, and product rotation requirements.

Follows Sanitation Standard Operating Procedures (SSOP) guidelines as they refer to proper equipment cleaning and sanitation. Completes and complies with 11 Commandments of Quality Assurance, Food Safety certification, and safety training required by warehouse and Food Service Department.

Pulls ingredients and supplies from warehouse. Stocks large volume ingredients. Takes ingredients to preparation area and refills dispensing machines.

Follows proper Food Service and general safety and sanitation procedures and standards.

 

Follows Costco formulas and diagrams, and monitors finished merchandise to see that department consistency and quality standards are met. Complies with health codes. Upholds safety and security procedures.

Rotates and stocks boxes of chickens and boxes of other rotisserie items in cooler. Rotates and stocks supplies in prep area and cooler.

 

Performs preventative maintenance for machinery, equipment, and implements. Cleans equipment. Washes and sanitises parts.

Counts merchandise on hand, figures production needs, and documents production on daily form. Fills out time and temperature record forms. Records merchandise to be salvaged, damaged or destroyed for Manager audit.

Completes sanitation checklist after final clean up.

Cleans area. Cleans pans and utensils. Empties drain screens and trash. Operates trash compactor and cardboard baler. Cleans rotisserie ovens and hoods.

Follows proper cleaning and general safety procedures and standards.

Assists other areas in the department as necessary.

Provides prompt and courteous customer service to members, employees, and suppliers.
