Job Role (Responsibilities & Duties)plan, collect and organise food and commodities for menus according to the Company standard. Ensure all standard recipes are adhered in the preparation process. Read recipes, menus and orders. Ensure all equipments, crockery, tools and work order are followed through.
Prepares food / ingredients as per the Chef's instructions / menu list. Ensures high standards of sanitation and cleanliness are maintained throughout kitchen area, cold rooms and all equipments. Ensure and control food portion of food order- receive and ensure that all food items are of high quality and right quantity. Responsible or proper storage, labeling and use of all food supplies to prevent unnecessary spoilage and to maintain cost control.
Determining the quantity of food items and mise-en-place to be produced, bought or prepared for that day with a view to exercise maximum control on wastage and achieve optimum profitability. Performs miscellaneous job-related duties as assigned.
Candidate requirements certificate in culinary studies would be an advantage. Good culinary skills and sound knowledge in all work flow of the kitchen. Preferably with at least 1 year of experience in serving Italian/Western Cuisin.
